Place the chocolate and salt in a heatproof bowl. In a small saucepan, bring the heavy cream to a gentle simmer, stirring occasionally.
Remove from the heat and pour it over the chocolate mixture. Whisk until the chocolate is fully melted and the ganache is smooth and velvety.
Notes
If you’d like to use the ganache as a sauce and it feels too thick, simply stir in a little extra heavy cream at a time until it reaches your desired consistency.
