Ingredients

  • 2 large mangos
  • 1/2 red bell pepper, diced
  • 1/2 orange bell pepper, diced
  • 1/2 medium red onion, diced
  • 1 jalapeño, seeded, diced
  • 1/2 bunch cilantro, chopped
  • 1 avocado, diced
  • 1/4 cup lime juice
  • To taste kosher salt, (2 tsp)

Instructions

  • Peel the mangos and remove the flesh from the seed. Dice the mango into bite-sized pieces.
  • In a large bowl, combine the mango, bell peppers, onion, jalapeño, cilantro, avocado, lime juice, and salt to taste.
  • Gently mix to combine, being careful not to mash the avocado. Serve as a fresh salsa with chips or as a topping for tacos.
