Masa harina pancakes are a combination of all purpose flour and masa itself. At a glance, they won’t look any different to regular pancakes, but you can be sure the flavors will win you over.

Wet Ingredients

  • 2 large eggs, room temperature
  • 1 3/4 cup buttermilk, room temperature  
  • 1 tsp vanilla extract 
  • 2 tbsp melted butter, unsalted 

Instructions

  • Dry ingredients: in a large bowl combine them masa harina, flour, protein, sugar, salt, baking powder, and baking soda. Whisk until well distributed. 
  • Wet ingredients: in a separate large bowl whisk together the eggs, buttermilk, vanilla, and butter until well combined. 
  • Pour in the wet ingredients into the dry ones. Gently fold until just combined. Avoid overworking the batter, a few lumps are ok. Let it rest for 10 minutes. 
  • Heat a large non-stick pan or griddle over medium heat. Scoop or spoon enough batter to make a medium pancake onto the hot surface and lower the heat to medium-low. Cook until the underside turns golden brown, edges are set and bubbles start to pop. Using a spatula, flip and finish cooking it as the second side browns as well. Remove from the griddle and continue making the rest. 
  • Serve warm, top with a dollop of butter and strawberry sauce or maple syrup. ENJOY!
