Last time I traveled to my hometown in Mexico, I spotted a street vendor who was selling Mexican street corn. They had the charcoal going and you could pick your own grilled corn. Then, add the toppings. Its the perfect side dish, appetizer or even dessert when making carne asada. Because, the grill is still fired up and we can grill them.
