Mexican Street Corn (Elotes)
Savor the flavors of Mexican street corn—perfectly charred, smoky, and sweet, then topped with creamy, tangy, and spicy goodness that bursts in every bite!
Ingredients
Servings: 4 servings
- 4 corn on the cob
Toppings
- Mexican crema, or mayonnaise
- Cotija cheese or queso fresco, crumbled
- Ground guajillo chile, or tajín
- Hot sauce
- Lime juice
- Cilantro, chopped
- To taste salt
Instructions
- Remove the husks and silk from each ear of corn and rinse.
- Preheat the grill. Place the corn directly on the grates, turning occasionally, until golden brown, evenly charred and cooked. Transfer to a plate.
- Lay out all toppings so each person can customize their corn. Brush with crema or mayonnaise, sprinkle with cheese and guajillo powder until evenly coated.
- Drizzle with hot sauce, a squeeze of lime juice, and sprinkle with fresh cilantro and salt.
Simpler version
- Only drizzle lime juice, sprinkle cilantro, and add a pinch of salt over the corn.
