Mexican Street Corn (Elotes)

Savor the flavors of Mexican street corn—perfectly charred, smoky, and sweet, then topped with creamy, tangy, and spicy goodness that bursts in every bite!

Ingredients 

Servings: 4 servings
  • 4 corn on the cob 

Toppings 

  • Mexican crema, or mayonnaise
  • Cotija cheese or queso fresco, crumbled 
  • Ground guajillo chile, or tajín
  • Hot sauce
  • Lime juice
  • Cilantro, chopped
  • To taste salt

Instructions 

  • Remove the husks and silk from each ear of corn and rinse.
  • Preheat the grill. Place the corn directly on the grates, turning occasionally, until golden brown, evenly charred and cooked. Transfer to a plate.
  • Lay out all toppings so each person can customize their corn. Brush with crema or mayonnaise, sprinkle with cheese and guajillo powder until evenly coated.
  • Drizzle with hot sauce, a squeeze of lime juice, and sprinkle with fresh cilantro and salt.

Simpler version

  • Only drizzle lime juice, sprinkle cilantro, and add a pinch of salt over the corn.
