Chipotle Tomatillo Salsa
Ingredients
- 1/2 lb tomatoes
- 1/2 lb whole tomatillos
- 1/4 medium white onion
- 2 garlic cloves, unpeeled
- 1 small garlic clove, peeled
- 2 chipotle chiles, in adobo sauce
- 1/4 tsp cumin seeds
- To taste salt
Instructions
- Roast the tomatoes, tomatillos, onion, and 2 unpeeled garlic cloves on a comal over medium to medium high heat. Once cooked and charred/blacked all around, remove from the heat. Some ingredients will be ready sooner then others. Allow them to cool down.
- Remove the peel from the garlic. Cut out the stem from the onion. Add all the roasted ingredients into a blender together with the small raw garlic clove, chipotle peppers, and cumin. Blend until completely smooth.
- Pour the salsa into a container, stir in salt and set aside until needed.
