When it comes to Mexican salsas; you must know, roasting equals flavor. Seriously, the charred ingredients are a synonym of gratifying smoky tones that complement any dish. This chipotle tomatillo salsa has all the right ingredients which makes for a well balanced end result. 

Ingredients

  • 1/2 lb tomatoes, whole 

  • 1/2 lb tomatillos, whole  

  • 1/4 ea medium white onion 

  • 2 ea garlic cloves, unpeeled 

  • 1 ea small garlic clove, peeled 

  • 2 ea chipotle peppers in adobo sauce

  • 1/4 tsp cumin, whole  

  • Salt to taste 

Directions

  • Roast the tomatoes, tomatillos, onion, and 2 unpeeled garlic cloves on a comal over medium to medium high heat. Once cooked and charred/blacked all around, remove from the heat. Some ingredients will be ready sooner then others. Allow them to cool down. 
  • Remove the peel from the garlic. Cut out the stem from the onion. Add all the roasted ingredients into a blender together with the small raw garlic clove, chipotle peppers, and cumin. Blend until completely smooth.
  • Pour the salsa into a container, stir in salt and set aside until needed.
