minutesLast time I traveled to my hometown in Mexico, I spotted a street vendor who was selling Mexican street corn. They had the charcoal going and you could pick your own grilled corn. Then, add the toppings. Its the perfect side dish, appetizer or even dessert when making carne asada. Because, the grill is still fired up and we can grill them. Have all the toppings ready to go, so everyone can make their own or choose to have as is (grilled.)

- Remove the husk and silk from the corn. Give them a quick rinse if you like. Fire up the grill and place them directly on top of the grates. Grill until cooked, golden brown and charred all around. Once ready, transfer onto a plate.
- Assemble: Have all of the toppings laid out and ready to go for each person to make their own. Brush the cream/mayo, sprinkle the cheese and guajillo until the corn is well coated. Drizzle the hot sauce, a touch of lime juice, cilantro and salt.
- Simpler version: Drizzle lime juice, cilantro and a touch of salt over the corn.
- If making carne asada, pair with these sides: Mexican style potato salad, Mexican beans, Mexican rice, Mexican salsa, Guacamole, Refried beans, Corn tortillas.
