Spaghetti Pasta Salad
Spaghetti Pasta Salad, as part of Mexican cuisine, may come as a surprise to many. But the truth is pasta salads are often the perfect accompaniment for many Mexican dishes. I specifically like the combination with my oregano chicken recipe, a classic from Oaxaca, Mexico. Its use is a commonality depending on the dish. Another way you can find a specific type of pasta would be for tacos.

although It isn’t rare to find the option of pasta salad at your local taqueria, making your own will give you that much more satisfaction. If you have the chance to visit a traditional taqueria, it will allow you the opportunity to taste such a unique combination. Though it would probably not be spaghetti but coditos (elbow shaped pasta). Either way you find it will make for a great addition to the experience!

Spaghetti Pasta Salad
Ingredients
- 8 oz spaghetti, uncooked
Veggies
- 1/2 red onion, sliced
- 4 celery sticks, diced
- 1 bell pepper, sliced
- 1 cup mixed veggies
- 4 cherry vine tomatoes, diced
- 1/2 cup cilantro, chopped
Dressing
- 3/4 cup sour cream
- 1/2 cup mayo
- 2 tbsp dijon mustard
- 1 lime zest
- 2 tbsp lime juice
- 1 garlic clove, pressed or minced
- To taste salt
- To taste ground pepper
Instructions
- Cook the spaghetti according to the package instructions. Drain and rinse under cold water to cool. Set aside until needed.
- In a very large bowl combine the drained and cooled pasta, along with the veggies and cilantro. Pour in the dressing and toss everything until well combined. Enjoy!
