Spaghetti Pasta Salad, as part of Mexican cuisine, may come as a surprise to many. But the truth is pasta salads are often the perfect accompaniment for many Mexican dishes. I specifically like the combination with my oregano chicken recipe, a classic from Oaxaca, Mexico. Its use is a commonality depending on the dish. Another way you can find a specific type of pasta would be for tacos.

Though it would probably not be spaghetti but coditos (elbow shaped pasta). Either way you find it will make for a great addition to the experience!

Pasta salads are incredibly delicious and with minimal efforts. This spaghetti salad is not the exception and pairs so good with many other recipes. In fact, pasta salads are often used as accompaniment for Mexican dishes. I specifically like the combination with my oregano chicken recipe, a classic from Oaxaca, Mexico. This salad does not disappoint!

Ingredients

  • 8 oz spaghetti, uncooked

  • Veggies 
  • 1/2 red onion, sliced 

  • 4 ea celery sticks, diced  

  • 1 ea bell pepper, sliced  

  • 1 cup mixed veggies 

  • 4 ea cherry vine tomatoes, diced

  • 1/2 cup cilantro, chopped 

  • Dressing 
  • 3/4 cup sour cream 

  • 1/2 cup mayo 

  • 2 TBSP dijon mustard

  • 2 TBSP lime juice 

  • Zest of the lime 

  • 1 garlic clove, pressed/minced  

  • Salt to taste 

  • Ground pepper to taste 

Directions

  • Cook the spaghetti according to the package instructions. Drain and rinse under cold water to cool. Set aside until needed. 
  • In a bowl combine the ingredients for the dressing. Whisk until well combined. 
  • In a very large bowl combine the drained and cooled pasta, along with the veggies and cilantro. Pour in the dressing and toss everything until well combined. Enjoy!
