Why do we mix dry and wet ingredients separately

There is a key step that needs to be looked after in order to make the fluffiest and softest pancakes. It all comes down to mixing the dry and wet ingredients separately. As a result, once they come together, there will be very little mixing to do. In return, you won’t overwork the batter or gluten and the pancakes will turn out amazing! Having a few lumps in the batter is a good sign you mixed just until it came together and there were no dry patches.

Adjust the consisteny

If the batter seems a little too thick, add a few drops of milk until it reaches the right consistency. Avoid over mixing.

Ingredients 

Servings: 8 servings

Dry Ingredients

Wet Ingredients

  • 2 large eggs, room temperature
  • 1 3/4 cup buttermilk, room temperature  
  • 1 tsp vanilla extract 
  • 2 tbsp melted butter, unsalted 

Instructions 

  • Dry ingredients: in a large bowl combine them masa harina, flour, protein, sugar, salt, baking powder, and baking soda. Whisk until well distributed. 
  • Wet ingredients: in a separate large bowl whisk together the eggs, buttermilk, vanilla, and butter until well combined. 
  • Pour in the wet ingredients into the dry ones. Gently fold until just combined. Avoid overworking the batter, a few lumps are ok. Let it rest for 10 minutes. 
  • Heat a large non-stick pan or griddle over medium heat. Scoop or spoon enough batter to make a medium pancake onto the hot surface and lower the heat to medium-low. Cook until the underside turns golden brown, edges are set and bubbles start to pop. Using a spatula, flip and finish cooking it as the second side browns as well. Remove from the griddle and continue making the rest. 
  • Serve warm, top with a dollop of butter and strawberry sauce or maple syrup. ENJOY!
