Squash blossoms quesadillas are the perfect treat to have when in season. These flowers can be made in so many ways but a squash blossom quesadilla is the perfect treat to have. The excitement that comes with finding this flower is real and inspirational because the outcome is delicious!

Ingredients

  • To make Corn tortillas
  • 2 cups Corn masa harina

  • 1 1/2 cups water + more if needed

  • For the Quesadillas
  • 16 Squash Blossoms (flower), rinsed and drained

  • 8 oz Oaxaca or Mozzarella cheese (as much as you like)

  • Mexican Salsa

Directions

  • Prep the flower: We are only using the flower, separate from the stem and remove any green petals the flower was enclosed in. Carefully rinse them and drain any excess water. Set aside until needed.
  • Make the tortillas : Place the masa harina in a large bowl and add water gradually kneading in between additions. Once the dough comes together in the shape of a ball continue kneading until smooth, firm, and does not stick to your clean hands. Proceed to make the tortillas. Know that you can also use store bough corn tortillas. Just heat them up and make the quesadillas.
  • Quesadillas: While the tortilla is on the hot comal, sprinkle the cheese to half of it. Lay 2 flower tortillas over the cheese and close creating a half moon shape. Wait for the underside to toast and become golden brown. Flip and allow the other side to do the same. When the cheese has fully melted remove the quesadilla from the heat, open it up, add mexican salsa, close it again and ENJOY!
