Ingredients
1/2 cup white onion, diced
1/2 cup roma tomato, diced
2 TBSP serrano pepper, finely chopped
1/4 cup cilantro, chopped
2 ea (1.25 lbs) avocados, large
1/2 lime, juicy
To taste salt
Directions
- Bring out the molcajete and add 2 TBSP of the white onion, the serrano peppers, and 2 TBSP from the chopped cilantro. Sprinkle a pinch of salt to help break down the ingredients. With the pestle, grind away until they turn into a fine paste.
- Next, open and remove the flesh from the avocados. Mash them in, and try to keep it chunky. Top with the remainder of the white onion, tomatoes and cilantro. Squeeze in the lime juice and season with salt to taste. With a spoon, mix everything until well combined.
- Serve immediately or transfer into an air tight container, place a sheet of plastic wrap directly on top of the guacamole to keep the air out, close and store in the refrigerator.
- Pair this guacamole with Carne asada and Mexican Rice
