Pasta salad
This fresh and easy pasta salad is loaded with colorful veggies and flavors that blend beautifully for a creamy satisfying bite.
Ingredients
Servings: 8 servings
- 8 oz rotini pasta, or preferred kind
- 1/2 medium red onion, diced
- 4 celery sticks, diced
- 1 bell pepper, diced
- 1 cup mixed veggies
- 8 oz cooked black beans, drained and rinsed
- 1/2 cup cilantro, chopped
Dressing
- 3/4 cup sour cream
- 1/2 cup mayo
- 2 tbsp dijon mustard
- Zest of one lime
- 2 tbsp lime juice
- 1 garlic clove, pressed or minced
- To taste kosher salt, (1 tsp)
- To taste ground black pepper
Instructions
- Cook the pasta of your choice according to the package instructions in salted water. When cooked, drain the water, and rinse the pasta under cold water.
- In a large bowl combine, the drained and cooled pasta, red onion, celery, bell pepper, mixed veggies, black beans, and cilantro. Set the bowl aside momentarily.
- In a separate small bowl, combine the ingredients for the dressing. Whisk until well combined and smooth. Pour into the large bowl and stir/fold everything in until evenly coated. You can serve right away or cover and store in the fridge until ready to serve.

I have yet to make this salad. But I was wondering what I could sub for the black beans as my husband and I don’t care for them? Thank you.

You can substitute black beans with chickpeas or cooked shredded chicken for added protein. Enjoy your salad!
