minutesFresh, delicious and super easy to make pasta salad. If that wasn’t enough, its loaded with veggies, colors, and flavors that blend beautifully together. Each bite is accompanied by joy and satisfaction.
Ingredients
8 oz pasta of your choice (rotini)
1/2 medium red onions, diced
4 sticks of celery, diced
1 bell pepper, diced
1 cup mixed veggies
8 oz cooked black beans, drained and rinsed
1/2 cup cilantro, chopped
- Dressing
3/4 cup sour cream
1/2 cup Mayo
2 TBSP dijon mustard
The zest of one lime
2 TBSP lime juice
1 ea garlic clove, pressed or minced
Salt to taste (1 tsp salt kosher)
Ground black pepper, to taste
Directions
- Cook the pasta of your choice according to the package instructions in salted water. When cooked, drain the water, and rinse the pasta under cold water.
- In a large bowl combine, the drained and cooled pasta, red onion, celery, bell pepper, mixed veggies, black beans, and cilantro. Set the bowl aside momentarily.
- In a separate small bowl, combine the ingredients for the dressing. Whisk until well combined and smooth. Pour into the large bowl and stir/fold everything in until evenly coated. You can serve right away or cover and store in the fridge until ready to serve.
