Cucumber Agua FrescaCourse: DrinksCuisine: MexicanDifficulty: Easy
Making cucumber agua fresca is incredibly easy, delicious and refreshing. The cooling effect from the mint and fresh flavor from the lime juice makes it the perfect summer time drink. It truly makes you fall in love with the joys of Mexican flavors.
2 lbs cucumbers (3 large)
6 cups water
10 mint leaves
1/4 cup lime juice
To taste sugar (1/2 cup)
- Cut the ends off from the cucumbers. Then, peel and cut into smaller pieces. Transfer into a blender, pour in two cups of water and the ten mint leaves. Blend until completely smooth. Optional: if needed, strain the mixture to get rid of the pulp. Pour the blended mix into a pitcher.
- Now, add in the lime juice, sugar, 4 cups of water and stir until the sugar has completely dissolved.
- DECOR and serve: Dip the rim of a glass in some of the agua fresca, and then pass it by the tajin. Add ice into the glass. Place some sliced cucumber and limes in between the ice cubes. Fill the glass with the agua fresca and garish the rim with a lime slice and mint leaf. ENJOY!!
