Chicken needs to be removed from the refrigerator 15-20 before cooking to even out in temperature. This simple step allows the meat to cook more evenly since the center will not be too cold. Additionally, it reduces the cooking time while promoting a more tender and juicy end result.

Why use chicken thighs for this recipe?

Chicken thighs can withstand high temperatures making them easy to work with. This recipes requires the cuts to be sliced prior to cooking and we need the meat to hold up, without drying out.

Chicken thighs are not only extremely flavorful but the fat content, connective tissue, and thickness are great factors that promote juiciness. Plus, you can push for a brown color and crispiness without destroying the texture of the bird.

Bell peppers

Making Sheet Pan Chicken fajitas is super easy and so is picking the bell peppers. Different colored ones will bring diversity with well balanced flavors. The riper the pepper, the sweeter the flavor.

Poblano peppers are amazing when used in fajitas because of their deeper earthy flavor. Their origin traces back to Puebla and is a go to for so many traditional recipes.

Why you should cut against the grain?

Cutting the chicken thighs against the grain ensures a more tender and juicier piece. This happens because by cutting in a perpendicular direction to the fibers/muscles, you shorten the fibers. Thus, resulting in a better texture that allows the fajitas to cook more evenly.
