Green Salsa Taquera Ingredients 

  • Tomatillos are a type of fruit that are surprisingly related to tomatoes! They boast a unique sweet, tart, and fruity flavor profile, making them a perfect addition to green salsas.
  • White onions, also known as “cebolla blanca” in Mexico, are naturally sweet and mild, making them a great choice for adding depth to your salsa without overpowering it.
  • Chiles de arbol are small, skinny peppers that pack a big punch! With their beautiful red color and smoky, sweet flavor, they add a depth of flavor to any dish.
  • Garlic is a fundamental ingredient used worldwide, and for good reason! Its distinctive flavor profile, aroma, and overall richness make it a versatile ingredient that enhances many dishes.

How to make Salsa Verde Taquera

Place a comal over medium heat. Toast the chiles de arbol for a few seconds until fragrant. Be careful not to burn them.

Roast the tomatillos, onion, and un-peeled garlic cloves until charred and cooked through.

Let cool, then blend with toasted chiles de arbol, raw garlic, cilantro, and salt until smooth.

Pour into a bowl and stir in the diced avocado. 

Boiling vs Roasting : Two paths to the perfect salsa 

When it comes to making salsa, you have two options: boiling and roasting. 

Boiling is a quick and easy method that yields soft, blendable ingredients. However, some of the flavors may transfer into the water, resulting in a slightly less intense flavor profile.

On the bright side, boiling preserves the bright, grassy flavors of the ingredients.

Roasting, on the other hand, is a game-changer. This method develops a rich, smoky undertone that’s both profound and delicious.

As the ingredients roast, their flavors concentrate and deepen, with a hint of char that adds depth and complexity.

Plus, if you cook them over wood charcoal, they’ll cook even faster than if you were to boil them, thanks to the direct high heat. The end result? A perfect salsa that’s rich in flavor and sure to impress.

Substitutions and TIPS! 

Adjust the Heat: Adjust the spiciness of your salsa to your liking by reducing or adding more peppers. For a mild salsa, use fewer peppers, and for a spicy kick, add more!

Experiment with different peppers like jalapeños and serranos to find your perfect blend. 

Get the Right Consistency: Achieve your desired salsa consistency by adding a tablespoon of water at a time until it reaches the perfect thickness. Whether you like it thick and chunky or smooth and silky, it’s up to you!

Taste and Adjust: Remember to taste your salsa at the end and add salt if needed. A bland salsa is a tragedy! Make sure to season it to perfection.

Storage and freezing instructions 

To store: Transfer the salsa into an airtight container and refrigerate for up to a week. The acidity from the tomatillos will keep the avocado bits fresh and prevent browning. 

To freeze: Store the salsa in a freezer-safe container without the diced avocado, leaving some space at the top. Freeze for up to 3 months. When ready to use, thaw the salsa in the fridge or at room temperature before using. Once thawed, add the diced avocado and enjoy!

Ingredients

  • 1 lb tomatillos

  • 1/4 ea white onion

  • 5 ea chiles de arbol

  • 2 ea garlic cloves, unpeeled  

  • 1 ea garlic clove, peeled (raw)

  • 1/4 bunch bunch cilantro 

  • To taste kosher salt

  • 1 ea avocado, diced

Directions

  • Place a comal over medium heat. Toast the chiles de arbol for a few seconds until fragrant. Be careful not to burn them.
