When it comes to homemade, things simply taste better, which is why I had to make my own Tajín style seasoning. Ready in just 5 minutes, this tangy, smoky, and perfectly balanced blend leaves store-bought behind.

Tajín Style Seasoning

I grew up enjoying Tajín on chips, fresh fruit, paletas, aguas frescas, elotes, and so much more. Once I realized how easy and affordable it is to make at home, I knew I had to share this version with you.

Made with just a handful of ingredients, including dried chiles and citric acid, this tangy, savory seasoning can take almost any snack to the next level.

What Is Tajín and Chile-Lime Seasoning?

Tajín is a popular Mexican brand of chile seasoning known for its bright, tangy flavor and mild heat. More broadly, chile-lime seasoning refers to a blend of dried chiles, salt, and an acidic component, often citric acid, which creates the signature tangy flavor associated with this style of seasoning.

Tajín and Chile-Lime Seasoning

While the bottled version is widely recognized, many families and vendors prepare their own chile-lime blends, often adjusting the ingredients to create a version that is uniquely their own.

The commercial Tajín seasoning was introduced in Mexico in the 1980s, but the combination of chile, citrus, and salt has long been a beloved flavor profile in Mexican cuisine.

Ingredients

  • Guajillo Chile – One of the most popular chiles in Mexico, guajillo is mild in heat with a bright, slightly fruity flavor that pairs well with a wide variety of ingredients.
  • Ground Ancho Chile – Adds rich chile flavor with earthy, smoky, and slightly sweet notes that help round out the seasoning.
  • Chipotle Powder Contributes a touch of smokiness and a subtle kick of heat, adding depth without overpowering the blend.
  • Kosher Salt – Enhances the flavors of the chiles and balances the acidity.
  • Food-Grade Citric Acid Provides the signature tangy flavor associated with chile-lime seasoning and helps recreate that classic citrusy punch.

Why Homemade?

This homemade version is a little different from the bottled seasoning. Because it relies on a generous amount of dried chiles, you’ll notice more chile flavor and complexity in every bite, while still delivering the tangy, savory profile that makes chile-lime seasoning so popular.

Of course, there’s a reason the original has remained a favorite for decades. I simply love that homemade allows you to customize the balance of flavors and use ingredients that bring extra depth to the blend.

What is Citric Acid

Citric acid is a naturally occurring acid found in citrus fruits and is commonly used in cooking to add a bright, tangy flavor. For this recipe, be sure to use food-grade citric acid, which is specifically intended for consumption.

Adding the right amount is important because the flavor becomes more pronounced as the seasoning rests overnight. If you’d like a tangier result, let the seasoning rest first, then add an extra ¼ to ½ teaspoon of citric acid to taste.

A little goes a long way, so avoid adding more than that. Too much can create an overly sharp flavor and may cause mouth or stomach irritation for some people.

Tips and Variations

  1. For more heat, replace the chipotle powder with ground chile de árbol.
  2. For a milder seasoning, replace the chipotle powder with paprika.
  3. Use pre-ground chiles for convenience, or grind your own.
  4. A small amount of sugar can be added, but it is completely optional.
  5. Adjust the salt to suit your preference.
  6. Let the seasoning rest overnight for the best flavor. The tanginess becomes more balanced and pronounced by the next day.

What to Use It On

Keep it in a cool, dry place away from direct sunlight and humidity. When stored properly, it will maintain its best flavor for up to 6 month.

Frequently Asked Questions

Does homemade Tajín taste exactly like the bottled version?

Not exactly. This homemade version has a more pronounced chile flavor, but it’s surprisingly close to the original.

Can I use fresh lime juice instead of citric acid?

No. Fresh lime juice will introduce moisture and significantly reduce the shelf life of the seasoning.

Why does the seasoning taste stronger the next day?

As the ingredients rest, the flavors meld together and the acidity becomes more evenly distributed throughout the blend.
