Northern Mexico is well known for its flour tortilla tradition, thanks to the region’s long history of wheat cultivation. While the exact origin of the burrito is still debated, it’s widely associated with the northern states of Mexico, where flour tortillas have been a staple for generations.

Beans, on the other hand, are a staple found in households throughout Mexico. They’re affordable, nourishing, and almost always simmering in a pot somewhere in the kitchen. Pair those homemade beans with a warm flour tortilla, and it’s easy to see how the burrito became a practical, satisfying meal that has stood the test of time.

I grew up in southern Mexico during the 1990s, where burritos weren’t part of our everyday meals. Instead, bean tacos made with freshly made corn tortillas were far more common. I still remember opening the basket they were wrapped in, the warm steam escaping, the tender tortilla, and that first comforting bite. It’s a flavor that’s stayed with me ever since, and one of the inspirations behind these bean and cheese burritos.

  • Garlic: I simply can’t imagine making refried beans without garlic. It adds that familiar savory depth that makes them taste just like home.
  • Paprika, Ancho Chile, Cumin, and Oregano: I love this combination because it adds smoky, earthy, and aromatic flavors.
  • Kosher salt: It may seem simple, but the right amount of salt is what brings every flavor to life.
  • Oaxaca and cheddar cheese: Oaxaca melts into those irresistible cheese pulls, while cheddar adds a richer flavor and beautiful color. Together, they’re hard to beat.
  • Flour tortillas: A good flour tortilla is just as important as the filling. It should be soft, pliable, and sturdy enough to hold everything together without tearing.

How to Make Bean and Cheese Burritos

Step 1: Make the Refried Beans

Start by mixing the cheeses and dividing them into two equal portions. In a large skillet, sauté the onion and jalapeños in the lard and olive oil until lightly golden. Stir in the garlic and spices, cooking for about 1 minute until fragrant. 

Add the beans and gradually mash in the reserved broth until creamy, thick, and spreadable. Finish by melting in half of the cheese mixture, then taste and adjust the salt.

Step 2: Fill and Roll the Burritos

Warm the flour tortillas until soft and pliable. Spoon the cheesy refried beans across the center of each tortilla, top with about 1 ounce of the remaining cheese mixture, then fold in the sides, tuck the bottom over the filling, and roll tightly into burritos.

Step 3: Serve

Note: If you plan to refrigerate or freeze the burritos, it’s best to skip this step until you’re ready to serve them.

Directions:
  1. Preheat a comal or large skillet over medium heat, then reduce to medium-low and lightly coat the surface with unsalted butter or oil.
  2. Place the burritos seam-side down and cook until golden brown, then continue turning until all sides are evenly browned and, if reheating, heated through.

My One Suggestion

That said, don’t let homemade tortillas be the reason you skip this recipe. Store-bought flour tortillas still make incredibly delicious burritos. The important thing is that you have options, so choose what works best for you and enjoy every bite.

This recipe is wonderfully versatile. While I love this combination of simple pantry staples, here are a few easy ways to make it your own.

  • Peppers: Jalapeños are my favorite because they add a mild kick without overpowering the beans. Poblanos add a deeper, earthy flavor, while serranos are perfect if you enjoy stronger heat.
  • Lard: Pork lard is the traditional choice and gives the beans their signature flavor. If needed, you can substitute it with beef tallow, chicken fat, or cooking oil.
  • Beans: Pinto beans are my go-to, but peruano beans are just as creamy and make an excellent alternative.
  • Cheese: Oaxaca cheese is my first choice because it melts beautifully. If you can’t find it, mozzarella is the closest substitute.

Before Storing: Allow the burritos to cool completely. Wrap each burrito individually in parchment paper or plastic wrap.

Refrigerate: Place the wrapped burritos in an airtight container or zip-top bag. Refrigerate for 3 to 4 days.

Freeze: Place the wrapped burritos in a freezer-safe zip-top bag, removing as much air as possible before sealing. Freeze for up to 3 months. Thaw in the refrigerator before reheating.

Reheating: Lightly grease a skillet or comal with a small amount of oil or unsalted butter. Warm the burritos over medium to medium-low heat until heated through and golden and crisp on all sides.

Can I use canned cooked beans?

Yes! Choose canned cooked beans without heavy seasoning, then separate the beans from the liquid and reserve the liquid. You’ll use it to adjust the consistency of the beans as you mash them.

If you run out of the reserved bean broth, use water for the remaining liquid as needed.

Can I add meat to these burritos?

Of course. Shredded chicken, carnitas, carne asada, or chorizo all make delicious additions if you’d like a heartier burrito.

Why should I grate the cheese myself?

Freshly grated cheese melts more smoothly because it doesn’t contain the anti-caking agents often found in pre-shredded cheese. That’s why I prefer grating it myself.

  • 10 large (10- to 11-inch) flour tortillas

Instructions 

REFRIED BEANS

  • In a large bowl, combine the Oaxaca and cheddar cheese until evenly mixed. Divide the cheese mixture into two equal portions. Set one aside for the refried beans and the other for assembling the burritos.
  • Heat a large skillet over medium heat. Melt the lard with the olive oil. Add the onion and cook until slightly softened. Stir in the jalapeños and cook until the onions are lightly golden.
  • Reduce the heat to medium-low. Add the garlic, smoked paprika, ground ancho chile, ground cumin, and oregano. Cook, stirring constantly, for 1 minute, or until fragrant.
  • Stir in the cooked beans. Gradually add the reserved bean broth while mashing with a potato masher until mostly smooth with some texture remaining.
  • The amount of broth will vary, so stop adding it once the beans are creamy and spreadable, yet thick enough to hold their shape inside a burrito. Keep in mind they will continue to thicken as they cool.
  • Once the beans are hot and have reached the desired consistency, stir in 10 ounces of the cheese mixture until melted. Season with salt to taste, then remove from the heat.

MAKE BURRITOS

  • Warm the flour tortillas until soft, pliable, and heated through, being careful not to crisp them.
  • Spoon the refried beans across the center of each tortilla, leaving a border around the edges. Top with about 1 ounce of the remaining cheese mixture.
  • Fold the sides of the tortilla over the filling. Fold the bottom edge up and over the filling, then roll tightly into a burrito. Repeat with the remaining tortillas and filling.
