Blooming Quesadilla Rings

Blooming Quesadilla Rings
Ingredients
Creamy Filling
- 4 cups cooked chicken, shredded
- 1/2 white onion, diced
- 1 tomato, diced
- 1 tsp ground guajillo
- 1 tsp smoked paprika
- 1/2 tsp ground garlic
- 1/2 tsp ground cumin
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- To taste Salt to taste
Cheese
- 8 oz cheddar cheese, grated
- 12 oz oaxaca cheese, grated
Additional items
- 12 flour tortillas, halved
- Pico de gallo
- Mexican salsa
Instructions
- Preheat the oven to 375°F
- Make the filling: in a large bowl combine all of the ingredients until well mixed in. In a separate bowl, combine both cheeses until well distributed.
- Take each half of the tortilla. Spread the cheese and filling. Roll in a cone, starting from the cut side. Make sure the filling stays inside. Line a sheet pan with parchment paper and place a ramekin in the center. Create a ring of quesadilla cones around the ramekin. Sprinkle cheese over them and make a top ring over the bottom ones. Remove the ramekin.
- Bake until the filling is heated through, cheese has melted and the edges are crispy. It will take 15-20 minutes. Serve on the sheet-pan (be careful, its hot.) Or, let it slightly cool down and transfer onto a platter. Fill the ramekin with salsa or pico de gallo, and place in the center of the quesadillas. ENJOY!
