What’s a chopped salad?

A chopped salad get’s its name from the fact that most, if not all, the ingredients are chopped into bite-size pieces. I’m obsessed with this type of salad because each bite is a perfect blend of flavors, textures, and nutrition. 

This recipe is mainly Mexican-inspired. I took a salad I love and added Mexican-inspired ingredients, so it’s not strictly authentic.

Ingredients

  • Cabbage – Its versatility and flavor make it the perfect addition, while also being very filling. 
  • Corn – adds a naturally sweet, slightly nutty flavor.
  • Tomato – Sweet with a vibrant pop of color.
  • Cucumber – Crisp and refreshing, adding a cool crunch and light flavor.
  • Red onion – Sweet and mild.
  • Cilantro – Fresh and herbaceous.

  • Lime – Tart and zesty.
  • Garlic – Savory, nutty and aromatic.
  • Extra virgin olive oil – Rich and fruity, adding smoothness and helping to meld all the flavors together.

  • 4 cups cabbage, finely shredded
  • 2 cups kale, roughly chopped
  • 2 cups spinach, roughly chopped
  • 1 cup corn kernels
  • 1/4 cup cilantro, chopped
  • 1 carrot, thinly sliced
  • 1 tomato, sliced
  • 1/2 cucumber, sliced
  • 1/4 red onion, sliced

Lime Vinaigrette

Instructions
